Description

A cozy, creamy roasted tomato basil soup with rich, deep flavors from oven-roasted tomatoes, fresh basil, and a touch of garlic. Perfect for a quick, comforting meal any time of year.


Ingredients

  • 3 pounds ripe Roma or vine-ripened tomatoes, halved or quartered
  • 1 cup fresh basil leaves, chopped
  • 45 garlic cloves, peeled and smashed
  • 3 tablespoons extra virgin olive oil
  • 1 medium yellow onion, diced
  • 3 cups vegetable or chicken broth (low sodium preferred)
  • 1/2 cup heavy cream or coconut cream
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes
  • Optional: 1 teaspoon sugar

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  2. Wash and halve or quarter the tomatoes. Spread evenly on the baking sheet.
  3. Toss garlic cloves in olive oil and nestle among the tomatoes.
  4. Drizzle 2 tablespoons olive oil over tomatoes and garlic. Sprinkle with salt and pepper.
  5. Roast for 25-30 minutes until tomatoes are soft and caramelized.
  6. While roasting, heat 1 tablespoon olive oil in a large pot over medium heat.
  7. Add diced onions and sauté for 8-10 minutes until translucent and slightly caramelized.
  8. Transfer roasted tomatoes and garlic with juices to the pot with onions.
  9. Add broth and bring to a gentle simmer. Cook for 10 minutes to meld flavors.
  10. Remove pot from heat and stir in fresh basil leaves.
  11. Puree soup with immersion blender until smooth, or blend in batches in a stand blender and return to pot.
  12. Stir in heavy cream or coconut cream. Season with salt, pepper, and optional red pepper flakes or sugar.
  13. Warm gently over low heat without boiling.
  14. Serve hot, garnished with fresh basil leaves or a drizzle of olive oil.

Notes

If soup is too thick, add more broth or water to adjust consistency. When blending hot soup in a stand blender, vent lid slightly and cover with a towel to avoid splashes. Add cream last and warm gently to prevent curdling. Fresh basil preferred for best aroma; frozen basil can be used if fresh is unavailable.
