Ingredients
- 3–4 medium ripe bananas, sliced
- 1/2 cup granulated sugar (100 grams)

- 1 teaspoon ground cinnamon

Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or non-stick spray.
- Peel and slice 3-4 ripe bananas into about 1/4-inch thick rounds. Set aside.
- In a large bowl, whisk together 1 cup all-purpose flour, 1 1/2 teaspoons baking powder, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, and 1/4 teaspoon ground nutmeg until evenly combined.
- In another bowl, whisk 1/2 cup granulated sugar, 1/4 cup brown sugar, 1 cup milk, 1/2 cup melted unsalted butter, and 1 teaspoon vanilla extract until smooth and well blended.
- Pour the wet mixture into the dry ingredients and stir gently until just combined; do not overmix.
- Arrange the sliced bananas evenly across the bottom of the prepared baking dish.
- Pour the batter over the bananas and spread evenly with a spatula, covering the bananas mostly.
- Optional: Drizzle 1/4 cup heavy cream evenly over the batter for extra creaminess.
- Bake in the preheated oven for 35-40 minutes until the top is golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Let the cobbler cool slightly for 10 minutes before serving.
Notes
Do not overmix the batter to keep the topping tender. Use ripe but firm bananas to avoid a watery cobbler. Grease the baking dish well to prevent sticking. Tent with foil if edges brown too quickly.
