- 3 medium zucchinis, thinly sliced or grated
- 1 ½ cups (340g) small-curd cottage cheese
- 3 large eggs, room temperature
- ½ cup (50g) grated Parmesan cheese
- 2 cloves garlic, minced
- 1 small yellow onion, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh parsley or basil (optional)
- Salt and freshly cracked black pepper, to taste
- ¼ cup bread crumbs (optional for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- If using sliced zucchini, lightly salt it and let it sit for 10 minutes to draw out excess moisture. Then gently squeeze the slices in a clean kitchen towel to avoid sogginess.
- Heat olive oil in a medium non-stick skillet over medium heat. Add minced garlic and chopped onion. Cook, stirring occasionally, until softened and fragrant, about 5 minutes. Avoid browning.
- In a large bowl, combine the drained zucchini, sautéed garlic and onion, cottage cheese, grated Parmesan, and fresh herbs. Stir gently.
- In a separate bowl, whisk the eggs until smooth. Pour the eggs into the zucchini mixture and fold everything together carefully. Season with salt and pepper to taste.
- Lightly grease an 8×8 inch (20×20 cm) oven-safe baking dish with olive oil or non-stick spray. Pour the mixture in and spread evenly.
- Sprinkle bread crumbs evenly over the top for a crunchy crust. Optionally, add extra Parmesan cheese on top.
- Bake in the preheated oven for 35-40 minutes until the top is golden and the center is set but still creamy. A toothpick inserted should come out mostly clean.
- Let the bake cool for 5-10 minutes before slicing to help it settle and make serving easier.
Notes
Drain zucchini and cottage cheese well to avoid sogginess. Fold ingredients gently to keep the bake light. Tent with foil if the top browns too quickly. Fresh herbs added after baking brighten the flavor. Can prepare mixture the night before and refrigerate.
