Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with foil and place a wire rack on top.
  2. Pat the boneless chicken pieces dry with paper towels and cut into 1.5-inch bite-sized chunks.
  3. In one bowl, combine all-purpose flour with ½ teaspoon salt and ¼ teaspoon black pepper.
  4. In another bowl, mix panko breadcrumbs, grated Parmesan, garlic powder, onion powder, remaining salt, and pepper.
  5. Toss chicken pieces in the flour mixture, shaking off excess.
  6. Dip floured chicken pieces into melted butter, then roll thoroughly in the Parmesan-panko mixture, pressing lightly to coat evenly.
  7. Arrange coated chicken pieces spaced evenly on the wire rack to avoid overcrowding.
  8. Bake for 20-25 minutes, flipping halfway through, until golden brown and internal temperature reaches 165°F (74°C).
