Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Peel and cut 1 pound of carrots into uniform sticks or halves.
  3. In a medium bowl, drizzle 2 tablespoons olive oil over the carrots. Add 1 teaspoon kosher salt and ½ teaspoon freshly ground black pepper. Toss well to coat.
