  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon freshly ground black pepper

  • 1/2 cup extra crumbled bacon (for rolling the balls)

Instructions

  1. Cook the bacon: Fry 8 slices of bacon in a skillet over medium heat until crispy, about 8-10 minutes. Transfer to paper towels to drain and cool. Once cooled, crumble into small pieces. Reserve about 1/2 cup for rolling the balls.
  2. Prepare the jalapeños: Rinse and finely chop 2 medium jalapeños. Remove seeds if you prefer less heat.
  3. Mix the base: In a large bowl, beat 8 ounces of softened cream cheese until smooth and creamy, about 2-3 minutes with a hand mixer.
  4. Add cheeses and seasonings: Stir in 1 cup shredded sharp cheddar, chopped jalapeños, 2 sliced green onions, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon smoked paprika, 1/4 teaspoon black pepper, and salt to taste. Mix well until evenly combined.
  5. Fold in crumbled bacon: Mix the remaining crumbled bacon into the cheese mixture.
  6. Form the balls: Use a tablespoon or cookie scoop to scoop out the mixture, then roll between your palms to form 1-inch balls. Chill for 10 minutes if mixture feels sticky.
  7. Coat with bacon: Roll each cheese ball in the reserved bacon crumbles to coat completely.
