  • 2 tablespoons low sodium soy sauce or tamari
  • Freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • Small handful of fresh herbs like parsley or basil, chopped

Instructions

  1. Wash and slice 2 medium zucchinis into half-moons about 1/4 inch thick.
  2. Clean and slice 8 ounces of cremini mushrooms thinly.
  3. Peel and thinly slice 1 medium yellow onion.
  4. Mince 3 cloves of garlic.
  5. Heat a large non-stick skillet or wok over medium-high heat and add 2 tablespoons of extra virgin olive oil. Warm until shimmering but not smoking, about 1-2 minutes.
  6. Add sliced onions and minced garlic to the hot oil. Stir frequently for 3-4 minutes until onions become translucent and start to caramelize, being careful not to burn the garlic.
  7. Add the sliced mushrooms and cook for another 5 minutes, stirring occasionally, until mushrooms release moisture and begin browning.
  8. Add the zucchini slices to the pan. Stir and cook for 4-5 minutes until tender but still slightly firm.
  9. Pour in 2 tablespoons of low sodium soy sauce or tamari, sprinkle with freshly ground black pepper and a pinch of red pepper flakes if desired. Stir well and cook for an additional 1-2 minutes to meld flavors.
  10. Remove the pan from heat, toss in chopped fresh herbs like parsley or basil, stir once more, and serve.

Notes

Avoid overcrowding the pan to prevent steaming the vegetables. Cook zucchini last and only until just tender to avoid mushiness. Add soy sauce near the end to prevent burning. Toss in fresh herbs after removing from heat for brightness. Optionally add protein like chicken, shrimp, or tofu near the end of cooking.
