- 3 large russet potatoes (about 2 pounds / 900 grams), peeled or unpeeled
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, finely minced or grated
- ½ cup finely grated parmesan cheese (about 50 grams)
- 2 tablespoons fresh parsley, finely chopped (optional)
- 1 teaspoon salt, or to taste
- ½ teaspoon freshly ground black pepper
- Optional: pinch of smoked paprika or chili flakes
Instructions
- Wash and peel (optional) russet potatoes. Slice into ¼-inch (about 6 mm) thick sticks. Pat dry thoroughly with kitchen towels to remove excess moisture.
- Preheat the air fryer to 380°F (193°C) for about 5 minutes.
- In a large mixing bowl, toss potato sticks with 2 tablespoons olive oil and minced garlic until lightly coated.
- Arrange fries in a single layer in the air fryer basket without overcrowding. Cook for 15 minutes, shaking or flipping halfway through for even browning.
- Transfer fries back to the mixing bowl. Sprinkle grated parmesan, salt, black pepper, and optional parsley over hot fries. Toss gently to coat while cheese melts slightly.
- Serve immediately for maximum crispness, optionally with ketchup, aioli, or a squeeze of fresh lemon juice.
Notes
Pat potatoes dry to ensure crispiness. Do not overcrowd the air fryer basket. Add parmesan while fries are hot for best melting and flavor. For extra crispiness, reheat fries in the air fryer for 2-3 minutes if needed. Fresh garlic is preferred over garlic powder to avoid bitterness.
