These air fryer zucchini fries are crispy on the outside, tender inside, coated with a flavorful parmesan and breadcrumb crust. A quick, healthy, and addictive snack or side dish perfect for any occasion.
Ingredients
- 2 medium zucchinis, sliced into fries
- ½ cup freshly grated parmesan cheese
- ¾ cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 2 large eggs, beaten
- Olive oil spray
Instructions
- Wash and dry 2 medium zucchinis. Cut off the ends, then slice lengthwise into ¼-inch thick strips, about 3-4 inches long.
- In a shallow bowl, combine ¾ cup panko breadcrumbs, ½ cup freshly grated parmesan, 1 teaspoon garlic powder, 1 teaspoon Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper. Stir well to blend flavors.
- Beat 2 large eggs in a separate bowl until smooth.
- Dip each zucchini fry first into the egg wash, letting excess drip off, then dredge thoroughly in the breadcrumb mixture. Press lightly to help the coating stick well. Place coated fries on a baking sheet or plate.
- Preheat the air fryer to 400°F (200°C) and let it warm up for about 3 minutes.
- Place breaded zucchini fries in a single layer inside the air fryer basket. Avoid crowding; cook in batches if necessary.
- Lightly spray the fries with olive oil spray.
- Cook at 400°F (200°C) for 8-10 minutes. Halfway through (around 4-5 minutes), flip fries gently with tongs and spray lightly again.
- Remove fries carefully and let cool briefly on a wire rack or paper towel to maintain crispness. Serve warm with your favorite dipping sauce.
Notes
For gluten-free option, substitute panko breadcrumbs with almond flour or gluten-free panko. For dairy-free, replace parmesan with nutritional yeast. Mist fries with olive oil spray before and halfway through cooking for best crispiness. Avoid overcrowding the air fryer basket to ensure even cooking. Fries can be baked at 425°F for 15-20 minutes as an alternative.
