Description
A quick and flavorful dish featuring crispy bacon and caramelized Brussels sprouts cooked in a cast iron skillet, perfect as a side or light main.
Ingredients
Scale
- 1 pound Brussels sprouts, trimmed and halved
- 6 slices thick-cut bacon
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Pinch of red pepper flakes (optional)
- 1 teaspoon balsamic vinegar (optional)
Instructions
- Rinse Brussels sprouts under cold water, trim ends, and halve lengthwise. Pat dry.
- Heat cast iron skillet over medium heat. Cook bacon slices for 5-7 minutes, flipping occasionally, until crispy. Remove bacon and drain on paper towels, leaving drippings in skillet.
- Add olive oil to bacon drippings and increase heat to medium-high. Place Brussels sprouts cut side down in a single layer and cook undisturbed for 4-5 minutes until golden brown.
- Stir Brussels sprouts, add minced garlic, red pepper flakes if using, salt, and pepper. Cook for another 4-5 minutes until tender but slightly firm.
- Crumble bacon and stir into skillet. Drizzle balsamic vinegar over the mixture and toss. Cook for 1-2 minutes to combine flavors.
- Serve immediately while hot.
Notes
Dry Brussels sprouts thoroughly before cooking to ensure caramelization. Cook bacon slowly over medium heat to render fat properly. Avoid overcrowding the pan to prevent steaming. Add a splash of water or broth if skillet dries out. Reheat leftovers gently in a skillet to maintain crispiness.
