- 1 pound (450g) medium or large shrimp, peeled and deveined
- 4 tablespoons (60g) unsalted butter
- 4 cloves garlic, minced
- 2 pounds (900g) Yukon Gold or Russet potatoes, peeled and cubed
- ½ cup (120ml) heavy cream
- Salt and pepper to taste
- A handful fresh parsley, chopped
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil (optional)
Instructions
- Peel and cube 2 pounds (900g) of Yukon Gold or Russet potatoes into 1-inch chunks.
- Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over medium-high heat and cook until potatoes are fork-tender, about 15-20 minutes.
- Drain the potatoes in a colander and return them to the pot off the heat. Add ½ cup (120ml) heavy cream and 2 tablespoons (30g) unsalted butter. Mash until smooth and creamy, adding salt and pepper to taste. Add more cream or milk if mash is too thick.
- Pat 1 pound (450g) of shrimp dry with paper towels and season lightly with salt and pepper.
- Heat 2 tablespoons (30g) unsalted butter and 1 tablespoon olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, avoiding browning.
- Add seasoned shrimp to the skillet in a single layer. Cook for 2-3 minutes per side until pink and opaque but not overcooked.
- Squeeze 1 tablespoon fresh lemon juice over shrimp and toss gently to coat.
- Spoon creamy mashed potatoes onto plates, top with garlic butter shrimp, and sprinkle with freshly chopped parsley. Serve immediately while warm.
Notes
Avoid overcooking shrimp to prevent rubbery texture. Cook garlic low and slow to avoid bitterness. Use Yukon Gold potatoes for creamier mash or Russets for fluffier texture. For dairy-free, substitute butter with vegan margarine and heavy cream with coconut cream.
