Ingredients
- 8 ounces sirloin or ribeye steak, cut into 1-inch cubes
- 1 cup baby red or Yukon gold potatoes, halved or quartered
- 3 cloves garlic, minced
- 3 tablespoons unsalted butter, divided
- 1 tablespoon olive oil
- 1 teaspoon chopped fresh thyme or rosemary (optional)
- Salt and freshly cracked black pepper, to taste
- Optional: squeeze of fresh lemon juice
- Optional: pinch of red pepper flakes
Instructions
- Wash and halve the baby potatoes so they are roughly uniform in size. Pat dry.
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add potatoes cut-side down and cook undisturbed for about 10 minutes until golden brown.
- Flip potatoes and cook for another 8-10 minutes, stirring occasionally, until tender and crispy. Season with salt and pepper.
- While potatoes cook, pat steak cubes dry and season generously with salt and pepper.
- Push potatoes to one side of the pan or remove temporarily. Add 1 tablespoon butter and melt over medium-high heat.
- Add steak bites in a single layer without crowding. Cook 2-3 minutes per side until medium-rare to medium with a nice crust. Remove steak and potatoes from pan and set aside.
- Lower heat to medium and add remaining 1 tablespoon butter. Add minced garlic and fresh herbs, stirring for 30 seconds to 1 minute until fragrant. Avoid burning garlic.
- Add red pepper flakes if desired.
- Return steak bites and potatoes to the pan and toss gently in the garlic butter sauce. Cook for another 1-2 minutes to combine flavors.
- Taste and adjust seasoning. Add a squeeze of lemon juice if desired before serving.
Notes
Pat steak and potatoes dry before cooking to ensure browning. Avoid overcrowding the pan to get a good sear. Use medium-high heat for best crust. Add butter after pan is hot to prevent burning. Stir garlic quickly and keep heat moderate to avoid bitterness. Resting steak bites is not necessary; toss immediately in garlic butter sauce to keep juicy. Leftovers keep well refrigerated for up to 2 days and reheat gently in a skillet to maintain texture.
