  • 1 cup baby red or Yukon gold potatoes, halved or quartered
  • 3 cloves garlic, minced
  • 3 tablespoons unsalted butter, divided

  • 1 teaspoon chopped fresh thyme or rosemary (optional)
  • Salt and freshly cracked black pepper, to taste
  • Optional: squeeze of fresh lemon juice

Instructions

  1. Wash and halve the baby potatoes so they are roughly uniform in size. Pat dry.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add potatoes cut-side down and cook undisturbed for about 10 minutes until golden brown.
  3. Flip potatoes and cook for another 8-10 minutes, stirring occasionally, until tender and crispy. Season with salt and pepper.
  4. While potatoes cook, pat steak cubes dry and season generously with salt and pepper.
  5. Push potatoes to one side of the pan or remove temporarily. Add 1 tablespoon butter and melt over medium-high heat.
  6. Add steak bites in a single layer without crowding. Cook 2-3 minutes per side until medium-rare to medium with a nice crust. Remove steak and potatoes from pan and set aside.
  7. Lower heat to medium and add remaining 1 tablespoon butter. Add minced garlic and fresh herbs, stirring for 30 seconds to 1 minute until fragrant. Avoid burning garlic.
  8. Add red pepper flakes if desired.
  9. Return steak bites and potatoes to the pan and toss gently in the garlic butter sauce. Cook for another 1-2 minutes to combine flavors.
  10. Taste and adjust seasoning. Add a squeeze of lemon juice if desired before serving.

Notes

Pat steak and potatoes dry before cooking to ensure browning. Avoid overcrowding the pan to get a good sear. Use medium-high heat for best crust. Add butter after pan is hot to prevent burning. Stir garlic quickly and keep heat moderate to avoid bitterness. Resting steak bites is not necessary; toss immediately in garlic butter sauce to keep juicy.
