  • 68 thick-cut bacon strips
  • ⅓ cup (80 ml) pure maple syrup
  • 4 garlic cloves, freshly minced
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fresh thyme, chopped (optional)
  • Salt to taste (about 1 teaspoon)
  • Black pepper to taste (about ½ teaspoon)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together maple syrup, minced garlic, olive oil, Dijon mustard, apple cider vinegar, chopped thyme, salt, and pepper.
  3. Pat the chicken thighs dry with paper towels. Place chicken in a large bowl and pour the marinade over it. Toss to coat evenly. Let it sit for at least 15 minutes or up to 1 hour.
  4. Wrap each chicken thigh with a slice of bacon.
  5. Heat a large skillet over medium-high heat. Add the chicken thighs, bacon side down, and sear for 3-4 minutes until bacon starts to crisp and caramelize. Flip and sear the other side for 2-3 minutes.
  6. If skillet is not oven-safe, transfer chicken to an oven-safe baking dish.
  7. Transfer the skillet or baking dish to the preheated oven and bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C) and bacon is crispy and golden.
  8. Remove from oven and let rest for 5 minutes before serving.
