  • 1/4 cup pure honey
  • 4 cloves garlic, minced
  • 1/3 cup low-sodium soy sauce
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil (optional, for searing)
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dried thyme or Italian seasoning
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water

Instructions

  1. Pat the pork chops dry with paper towels and season both sides with black pepper and dried thyme.
  2. Heat olive oil in a skillet over medium-high heat. Sear pork chops for 2-3 minutes per side until golden brown. Set aside.
  3. In a mixing bowl, whisk together honey, minced garlic, soy sauce, chicken broth, and apple cider vinegar until well combined.
  4. Place the seared pork chops in the slow cooker in a single layer. Pour the honey garlic sauce evenly over the chops.
  5. Cover and cook on low for 4-5 hours or on high for 2-3 hours until pork is tender and easily pierced with a fork.
  6. About 20 minutes before serving, mix cornstarch with cold water to create a slurry. Stir it into the slow cooker, cover, and cook on high for another 15-20 minutes until sauce thickens.
  7. Taste and adjust seasoning if needed. Serve pork chops warm with the thickened sauce spooned over the top.

Notes

Searing the pork chops before slow cooking adds flavor and a caramelized crust. Use fresh garlic for best aroma. Adjust sweetness or add heat with red pepper flakes or sriracha if desired. Check chops after 3 hours on low to avoid overcooking. Leftovers reheat well and flavors deepen overnight.
