- 1/4 cup pure honey
- 4 cloves garlic, minced
- 1/3 cup low-sodium soy sauce
- 1/2 cup low-sodium chicken broth
- 2 tablespoons apple cider vinegar
- 1 tablespoon olive oil (optional, for searing)
- 1/2 teaspoon ground black pepper
- 1 teaspoon dried thyme or Italian seasoning
- 1 tablespoon cornstarch mixed with 2 tablespoons cold water
Instructions
- Pat the pork chops dry with paper towels and season both sides with black pepper and dried thyme.
- Heat olive oil in a skillet over medium-high heat. Sear pork chops for 2-3 minutes per side until golden brown. Set aside.
- In a mixing bowl, whisk together honey, minced garlic, soy sauce, chicken broth, and apple cider vinegar until well combined.
- Place the seared pork chops in the slow cooker in a single layer. Pour the honey garlic sauce evenly over the chops.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours until pork is tender and easily pierced with a fork.
- About 20 minutes before serving, mix cornstarch with cold water to create a slurry. Stir it into the slow cooker, cover, and cook on high for another 15-20 minutes until sauce thickens.
- Taste and adjust seasoning if needed. Serve pork chops warm with the thickened sauce spooned over the top.
Notes
Searing the pork chops before slow cooking adds flavor and a caramelized crust. Use fresh garlic for best aroma. Adjust sweetness or add heat with red pepper flakes or sriracha if desired. Check chops after 3 hours on low to avoid overcooking. Leftovers reheat well and flavors deepen overnight.
